Festive Barrel Project 2024: Complete Collection
We are delighted to present the 2024 edition of Cloudwater's Christmas Barrel Project Release.
This year's releases have been conceived to provide moments of shared celebration, decadent contemplation and pleasant surprise. Developed with a variety of specially selected barrels, hops, fine organic fruits, and carefully sourced ingredients to deliver beers that range from luscious spirit-aged stouts to deeply complex blends with spontaneously fermented bases.

Incantation (750ml)
Cherry Wild Sour with Tonka Bean & Vanilla - 5.45 ABV
Using carbonic maceration to extract the fullest flavours from 500kg of cherries, we then added 500L of our 2 year old foudre ale to condition for one and a half years.
Expressing a great many characteristics of cherries, this BA Wild Ale offers a variety of flavours. Raw nuts, cherry pit, a mild and savoury autolysis character, berry sherbet, and a flavour of tart cranberries rehydrated with lemon juice. This is a fun and zippy beer that is at its best adding brightness and cheer to an occasion.
A Measure Of What We’ve Lost (750ml)
Spontaneously Fermented Beer with Chuckleberry, Lavender & Vanilla - 6.4% ABV
We used a traditional carbonic maceration technique from winemaking to gently break down 2.5 tons of chuckleberries, which is a beautiful hybrid of redcurrant, gooseberry and jostaberry. This was left in our foudre to co-ferment with 2500L Wild Ale for 2 years before adding lavender and vanilla to emphasize the complexity of the beer.
Huge citrus, lavender, and peppery aromas intertwine with flavours of fresh berries and sweet citrus fruits. The sourness is bright and smooth, elegantly rounded off with the addition of vanilla.
Delicate, refreshing and crisp with a lavish balance and high drinkability.
Time Being (750ml)
Mixed Berry Wild Sour - 7.5% ABV
This mixed BA beer blends 6 year old blueberry wild ale with 2 year old chuckleberry wild ale before being bottle conditioned for 2 years.
Featuring a combination of unexpected and customary flavours such as tomato, basil, bubblegum, light pepperiness, mild salinity, accompanied by a light farmyard funk.
We’d suggest this beer to be an excellent pairing with soft or goat’s cheese.
El Dorado & Sabro Foudre Beer (375ml)
Dry-Hopped Foudre Ale - 7.7% ABV
What was known must be rediscovered anew.
Leave your preconceptions at the bottle opener — our foudre beers provide biotransformational experiences to formerly familiar hop character. This 24g/L dry-hopped Foudre Ale is bursting with strawberry, notes of lychee, white chocolate, orange wine tannins, before a familiar bitterness takes hold.
For All We Know (375ml)
DDH Wet Hop Wild Ale - 6.3% ABV
This fine beer is a blend of wet-hopped ale and coolship inoculated spontaneously fermented beer with a dry hop of Columbus and Loral. With flavours of classic Red Ale-esque herbal hoppiness, orange, orange bitters, and fresh brettanomyces, it celebrates former times when amber and red beers were held in the highest esteem.
Love The Thought (375ml)
Nuruk Fermented Wild IPA - 8.1% ABV
Woosh! Bright lemon sherbet blends with a zesty hoppy fizz!
Dashing through a sweetshop of fun, bright and easy flavours, tethered to maturity by a light background funk. Herbal hoppiness and hints of grapefruit further ground each sip.
This BA mixed fermentation beer used in-barrel-fermentation on a culture entirely new to us. Korean Nuruk added a new energy, and curiously bright flavour profile to our approach to modern BA beer.
Let Spirits Fly In And Out (375ml)
Apple & Apricot Brandy BA Imperial Stout with Vanilla - 10.2% ABV
This Apple and Apricot Brandy Imperial Stout leads our winter BA offering with spirit-forward richness. A dance of deep liquorice, mahogany syrup, cola concentrate, leather, and coffee soaked oak wood unfold on the palate, delightfully reconfigured with each sip.
A Call To Be (375ml)
Rum BA Imperial Stout with Salted Chocolate & Tonka Bean - 9.6% ABV
A playful Imperial Stout aged in Rum barrels and infused with salt, cacao, and tonka. Rum opens up first, followed by bubblegum, salted taffy, cinder toffee and amaro bitterness.
Counting Stars (375ml)
Port & Marsala BA Baltic Porter with Cacao & Vanilla - 8.6% ABV
Evoking a sense of Dunkel's cocoa’d great uncle, our Baltic Porter collaboration with Pinta has been allowed to slumber for the last 11 months in Port and Marsala barrels. It unfolds on the palate through a combination of chocolate covered sour cherries, goji berries, and chrysanthemum infused coffee.

- Once packs have been released and orders fulfilled there will be single bottles available to order.
- We cannot guarantee a pre-Christmas delivery, but will do the absolute best we can to get them to you.
